1 pkg Turtle Island Just for JOy Artichoke Parmesan Soup with Roasted Garlic
1 – 15 oz can artichoke hearts
1 – 10 oz pkg chopped frozen spinach
1/2 C fancy grated parmesan cheese
4 oz (1/2 of an 8 oz block) cream cheese
Thaw spinach (microwave works great), drain & chop artichoke hearts.
Squeeze as much water as possible out of spinach and artichokes.
Prepare soup according to package directions, add cream cheese, parmesan and cook over low heat until melted and combined, stir in well drained spinach and artichokes. Heat through. Lovely garnished with a baby artichoke, a few baby spinach leaves and a little grated parmesan.
